Olympic Muffins are a big hit!

If you enjoyed the Olympic Muffins during the Year 8 Rich experience days and would like to make them at home, then here is the recipe.

255g (9oz) Self raising flour
1 teaspoon Baking powder
1/2 teaspoon salt
1 1/2 teaspoons mixed spice
85g (3 oz) Granulated sugar
1 Egg
170g (6 oz) Finely chopped apple
150 ml (5 fl oz) Milk
90 ml (3 fl oz) Vegetable oil or 85g (3 oz) Melted Butter
60-85g (2-3 oz) Raisins, sultanas
Optional topping- 3 tablespoons soft brown sugar

Method

1. Place muffin cases into tray and preheat oven to 190 deg C, Gas mark 5
2. In a large bowl sift together flour, baking powder, salt, spice and sugar.
3. In another bowl, beat egg with a fork. Stir in chopped apple and milk, followed by oil/melted butter.
4. Pour all of the wet mixture into the dry. Stir just until combined, adding dried fruit during the final strokes. This batter is thicker than most; apple releases juice as it cooks.
5. Spoon into the cases, sprinkle with topping. Bake for 20-25 minutes until tops are lightly browned and spring back when pressed gently. Cool for several minutes to make removal easier.
